All you need to configure a large, free standing ice maker is a refrigeration system, water supply and something to collect your ice in thats made. There are a number of ways to do this.
One of the simplest ways to do this which most professional systems do is with a large metal ice cube tray, which is positioned upright.
Like on the back of a refrigerator most ice makers have coiled heat exchangeing pipes which connect to the metal ice tray. If you do not yet know how these work please see our Commercial Refrigeration page as that has information on this process. A stream of refrigeration liquid is pushed around by a compressor on a continuous cycle. In this process the compressor basically moves the refrigerant liquid through the condenser tube to be condensed, it is then released into the wider tube the evaporator where it can expand.
The refrigerat pressure raises as it is compressed which also raises the temperature. The refrigerant condenses into a liquid a it passes through the narrow condenser coils lossing heat due the cooler temperatures outside. The liquide is then passed throught the expansion valve which makes it evaporate tuning it to gas.
Water is drawn from a collection sump by the ice makers water pump which is poured over a chilled ice tray. The water gradually freezes as flows onto the tray, the ice cubes then build up in the tray well. Clear ice is formed by freezing water this way, unlike ice at home which comes out cloudy as it is all frozzen at once.
A solenoid valve is triggered after a set time which is connected to the heat exchange coils, the path of the refrigerant is changed by switching this valve. The gas is forced into a wide bypass tube instead of the narrow pipe after the compressor stops. Now the hot gas gets pumpped back to the evaporator without condensing, this heats the ice tray rapidly making the ice cubes loosen and drop out.
Most ice maker will have individual cube cavities which have a slanted bottom to help the cubes slide out when loosened to drop into the collection pot. Other ice makers use a cylinder piston which will give the ice tray a shove to knock the ice cubes loose and then out to drop into the collection pot.
This are the kind of ice makers that most restaurants and hotels would use because they make a standard size and shped ice cube every time. Other ice makers are used to produce ice flakes for grocery stores and fish storage and packing etc.
